Shochu Vocabulary

Awamori – A distilled liquor from Okinawa Japan that is similar to shochu.  It is made from long grain, Thai style rice.  It is usually between 60 and 120 proof.

Honkaku – A type of shochu that is distilled only once.  These types of shochu tend to retain more of the flavour of the base ingredient and malt used in the process.

Imo – Sweet Potato

Mugi – Barley

Shuzo – Distillery

Soba – Buckwheat
